3-4 ripe mangoes (peeled and chopped)

1 onion (finely chopped)

2 cloves garlic (minced)

1 tablespoon ginger (grated)

1 cup sugar

1/2 cup vinegar (white or apple cider

1/2 cup raisins (optional)

Spices

1 teaspoon salt

1 teaspoon mustard seeds

1 teaspoon curry powder

1/2 teaspoon turmeric

Instructions

Step 1: Prepare ingredients

Peel and chop the mangoes.

Finely chop the onion, garlic,and grate the ginger.

Step 2: Cook te base

Heat a pot on medium heat with a little oil.

Add onion, garlic, and ginger. Cook until soft and fragrant.

Step 3: Add mangoes

Add the chopped mangoes into te pot.

Stir and cook for about about 2-3minutes.

Step 4: Add sugar and vinegar.

Pour in the sugar and vinegar.

Sitr until everything is well mixed.

Step 5: Add spices

Add salt, mustard seeds, curry powder, turmeric, and chili.

Mixed everything together.

Step 6: Simmer

Lower the heat and let it cook for 30-40 minutes

Stir occutionally so it does not stick.

Step 7: Check consistency

The chutney should become thick and glossy.

If too thick, add a little water.

If too thin, cok longer.

Step 8: Cool and Store

Turn off heat and let it cool completely.

Transfer into a jar and store in the fridge
